Description

Juniper/Beri Juniper/杜松子 is a strong aromatic (scented) herb from an evergreen plant or tree. It grows in temperate regions of Northern Europe, Asia, and North America. The cone of the juniper is the part that is referred to as the berry. It looks like a small green berry and ends up turning a bluish-black shade in the second year of growth. In the late spring, small flowers bloom on the juniper plant. The juniper berry is more like a small pine cone than a fruit. In fact, the juniper berry is not a fruit at all, but rather a type of bitter/citrus tasting spice.

The aroma of juniper is woody and bittersweet while on the palate it is sweetish, clean and refreshing with a slight burning note. Juniper has a wonderfully piney taste with citrus overtones (sometimes compared to rosemary) and is a common ingredient in German food. Juniper berries are classified in the culinary herb/spice category because they are commonly used as a flavoring for drinks and in cooking and preserving foods. It is also considered an herbal bitter and is thought to help promote digestion.

Suggested Use

Juniper is commonly used with lamb (or mutton) and is particularly good with venison and wild boar. You could even add them to a pot of chili, to give a rustic flavor that complements ground smoked chile peppers. Juniper is also a good flavoring to use with roast duck. To bring out juniper berries' slight citrus flavor, most recipes call for another fruit such as apples or prunes to be added. You can rub crushed juniper berries into the meat of your choosing before roasting it. Add a little ginger or garlic to the rub for a savory flavor. Or you can stew the berries before marinating or basting the meat with them.
