Mandi is a traditional dish that originated in Yemen but slowly spread through the whole Arabic Peninsula and even made its way to the Levant and Egypt. Mandi is simple rice cooked with lamb or chicken with herb and spices. The word “Mandi” comes from the Arabic word nada, meaning “dew”, and reflects the moist ‘dewy’ texture of the meat. That moist nature of the meat is attributed to the unique cooking technique. Mandi is traditionally cooked in a special kind of oven. The tandoor which is usually a hole dug in the ground then lined with clay or a giant metal barrel that is buried in the ground.

The dish is very aromatic and full of flavor, yet not heavily spiced. The rice is cooked in stock made with marinated meat or chicken, made full of flavor from both the meat and spices used as well as having the meat infused with herbs and spices. Suggested Use

It works well for kofta or kebab and steak, lamb, poultry or vegetable grills. Marinades the lamb or chicken for 3 to 4 hours and then slow cooked in the oven on a wire rack placed over the rice pot. By this method, the dripping from the chicken would fall over the rice and both the rice and the chicken would be extremely aromatic and can be cooked at the same time.

Ingredients
Cardamom pods, cloves, black pepper, nutmeg dry ginger powder and bay leaves. 
 

Storage
Keep in a clean, dry and cool place. Better to keep in the fridge once open.
